Then after passing through the moulding system, the high-moisture vegetable protein product with a directional fibrous tissue structure is produced. The protein products produced by high moisture meat analogue have a uniform texture, good toughness, good elasticity, high degree of fibrosis, less loss of nutrients, can be processed or eaten without rehydration, high protein content, low-fat content, and no cholesterol, high nutritional value, wide application range and a series of advantages. It can be used as a raw material for a variety of advanced vegetarian products, or simply processed into ready-to-eat vegetable protein snack foods.
